Ingredients

  • 2 thick slices of bacon per person
  • red onion, chopped
  • roasted potato
  • two eggs per person
  • salt and pepper
  • basil and sliced tomato for garnish

Equipment

  • 9" round skillet
  • cutting board and knife
  • spatula

Here is how:

Instructions are for preparing one portion. When preparing for several people, cook each portion in a separate pan.

  1. Cook two thick slices of bacon with chopped red onion.
  2. Add roasted potatoes and cook for a few minutes.
  3. Crack two eggs over the pan. Add salt and black pepper and cook until the eggs are cooked through.
  4. Garnish with basil and sliced tomato.
