Ingredients
- 2 thick slices of bacon per person
- red onion, chopped
- roasted potato
- two eggs per person
- salt and pepper
- basil and sliced tomato for garnish
Equipment
- 9" round skillet
- cutting board and knife
- spatula
Here is how:
Instructions are for preparing one portion. When preparing for several people, cook each portion in a separate pan.
- Cook two thick slices of bacon with chopped red onion.
- Add roasted potatoes and cook for a few minutes.
- Crack two eggs over the pan. Add salt and black pepper and cook until the eggs are cooked through.
- Garnish with basil and sliced tomato.
