Pork Ribs

Ingredients

  • 2 racks pork ribs
  • water to cover
  • 1 cup brown sugar
  • 1/4 cup soya sauce
  • 1/4 cup molasses
  • 2 Tbsp honey
  • 2 Tbsp Worcestershire sauce
  • 2 finely chopped shallots
  • 1 cup tomato paste
  • 2 Tbsp finely chopped mixed fresh herbs

Equipment

  • large stock pot with lid
  • cutting board and sharp knife
  • measuring cups and spoons
  • can opener
  • medium bowl
  • roasting pan
  • baster
  • oven mitts

Here is how:

  1. Place ribs in stock pot and cover with cold water. Cover with lid and bring to a boil. Reduce to a simmer, leaving lid on at an angle. Simmer 1 hour.
  2. Peel shallots and chop finely. Wash and finely chop the herbs.
  3. In a medium bowl, mix brown sugar, soya sauce, molasses, honey, Worcestershire sauce, shallots, tomato paste and herbs. Blend well.
  4. Preheat oven to 350° F.
  5. When ribs are cooked (after 1 hour), drain water and place ribs in roasting pan. Cover ribs with sauce. Bake 1 hour, basting occasionally with sauce.
  6. Serve hot!
